Mimosaesque

4 cups chilled orange juice
2 cups sparkling white grape juice
6 strawberries

Directions
  1. Lightly beat the orange juice to make it frothy.
  2. Add the grape juice and pour into 6 champagne glasses.
  3. Garnish with the strawberries.

Grilled Red Pepper Soup
(serves 4)

2 red peppers
1 tsp minced garlic
½ medium onion
2 Tablespoons olive oil
10½ ounce can condensed vegetable broth
12 ounce soy sour cream (I use tofutti brand)
salt and pepper to taste
4 Tablespoons of guacamole (optional)

Directions
  1. Grill the peppers, turning when each side turns black and blisters.
  2. Place in brown paper bag and fold bag over. Shake the bag to loosen the skin. Use a paper towel to wipe the remaining skin and blackened particles off the peppers. Remove the stem and seeds.
  3. Purée the peppers until smooth.
  4. Sauté the garlic, onion and olive oil together on low. When the onions are softened, add the red pepper purée.
  5. Add the broth and bring to a boil. Remove from the heat.
  6. Add salt and pepper to taste.
  7. Add the sour cream and return to the heat until the desired temperature is reached.

Grilled Basil Chicken

2 Tablespoons olive oil
2 Tablespoons dry sherry
1 ounce fresh basil, minced
salt and pepper to taste
1½ pound of boneless chicken breast

Directions
  1. Combine the oil, basil, sherry, salt and pepper.
  2. Lightly brush each piece of chicken place in a bowl and pour any remaining marinade onto the chicken. Let marinate at least 30 minutes.
  3. Place chicken on a medium hot grill. Cook thoroughly but do not allow the chicken to blacken.

Spring Veggie Fettuccini

2 Tablespoons olive oil
1 onion, minced
2 zucchini washed and sliced thin
2 yellow squash, washed and sliced thin
8 ounces mushrooms, washed and sliced thin
28-ounce can of diced tomatoes with Italian seasoning
1 pound cooked fettuccini

Directions
  1. Sauté the onion in the olive oil and add the other fresh vegetables.
  2. Cook the vegetables until softened.
  3. Add the diced tomatoes.
  4. Simmer for about 30 minutes.
  5. Serve sauce over the fettuccini and top with the basil chicken if desired.

Chocolate Banana Cream Pie

4 to 5 graham crackers
2 ounces dark chocolate
2 packages sugar-free chocolate pudding, prepared according to the package for pie.
2 bananas, sliced

Directions
  1. Place the crackers flat in a square pan. Use a knife to cut pieces to cover the bottom completely.
  2. Melt the chocolate on low in the microwave. Pour over the graham crackers to cover them. Place in refrigerator for 30 minutes to set up the chocolate.
  3. Layer the bananas int the pan and cover with the chocolate pudding.
  4. Refrigerate for several hours or until the pie is set.
